Hokkaido opened to great fanfare in Florissant. While you can get Thai or Ethiopian in Florissant, the town was entirely devoid of sushi. People poured in hoping to find a sushi oasis. While Hokkaido does have sushi chefs, the restaurant is more a pan-Asian buffet than anything specifically Japanese. They offer a small variety of pre-made sushi rolls. If you want something other than a basic spicy tuna roll or California roll, it costs $8 per roll in addition to the cost of the buffet.
