Inside the kitchen at Acero
Acero owner Jim Fiala wasn’t playing around when he hired Adam Gnau to be executive chef at his newest restaurant. He wanted to make sure they were doing things right at his only Italian bistro, so Fiala took Gnau to Italy a few months after he started working for him. “We spent a week in Italy, in Tuscany and Umbria; we just spent a week traveling around and ate and ate and ate, and it was awesome. It kind of solidified the fact that we were doing very traditional Italian cuisine without even knowing it. But, with that influence we came back and adjusted and tweaked the menu.” Here, Gnau takes us behind the scenes inside the Acero kitchen.
