Kelly begins by slicing four different varieties of locally grown heirloom tomatoes into large chunks and arranging the slices on a plate. Heirloom tomatoes have a different flavor and appearance than the typical red tomatoes, and are grown from plants that are many years old - as opposed to the typical tomatoes, which have man-made influences to help the plant’s growth and production.
